After returning home from San Jose on Sunday, I knew I only had 2 days to be productive before we left for Louisville for the 2016 American Saddlebred World Championships Horse Show! Another wild week of traveling and now I’ve made it to Las Vegas as of Sunday!
Monday
Breakfast -Egg whites, turkey bacon
Snack – Oatmeal with banana, almond milk, Sunflower Seed butter, coconut chips
Lunch – Protein Bar
Dinner – One Pan Chicken Apple Veggie Dinner
Tuesday
Breakfast – Banana, sfv coconut latte from Starbucks
Snack – Oatmeal with banana, almond milk, Sunflower Seed butter, coconut chips
Lunch – One Pan Chicken Apple Veggie Dinner
Dinner – Seaweed salad, no rice sushi roll, steamed gyoza from Sushi Planet
Snack – Protein bar
Wednesday
Breakfast – Umpqua Oats Variety Pack Super Premium Oatmeal, 12-Count, coconut almost latte (Peet’s) from Burbank airport
Snack – Banana
Lunch – Pei Wei’s Chicken and Brown Rice from Las Vegas Airport
Dinner – Beef kabobs, chicken kabob, green beans from barn party at Louisville show
Thursday
Breakfast – Egg whites, turkey bacon, fruit, hashbrowns from Cracker Barrel
Dinner – 2 All beef hot dogs from horse show
Friday
Breakfast – Egg whites, bacon, pineapple, potatoes
Lunch – California Cobb salad from Cardinal
Dinner – 1 All beef hot dog from horse show
Saturday
Breakfast – Egg whites, bacon, pineapple, potatoes
Lunch – California Cobb salad from Cardinal
Dinner – Filet mignon, asparagus, house salad w/ oil & vinegar fro Le Moo
Snack – Salad, chicken soup from Crowne Plaza Hotel
Sunday
Breakfast – Starbucks oatmeal, iced green tea w/ coconut milk
Snack – Starbucks Jade Citrus Mint green tea latte with coconut milk
Lunch – Edamame, chicken lettuce wraps from The Cheesecake Factory
Snack – Starbucks SFV coconut latte
Dinner – Salad, roasted veggies, chicken
With only 2 more days on the 30 day challenge, I will do a small post about the final two days and the outcome of the challenge.
The trip to Kentucky was incredible! Had a great time with new and old friends..
