Thanks to my bestie Juliana and her awesome husband, Andrea, they came ALL the way from the Bay Area in California to join me for a Vegan Easter celebration! It was a major joint effort and it all came out just amazing! What we made:
Appetizer – Potato & Avocado Nests
Dinner – Vegan Loaf
Side – Abe’s Vegan Corn Bread Muffins
Dessert – Chocolate & Jelly Bean Egg Nests
Everything was absolutely amazing and so simple to make!
APPETIZER: Potato & Avocado Nests
Shred 6 Yukon Gold Potatoes, then soak in cold water for 20 minutes. Create “nests” in a muffin sheet (sprayed with cooking oil) and bake at 350 degrees for 30-40 minutes (they need to just crisp at the top!). The nests were thin so we stacked three on top of each other per “nest” and then shredded some red cabbage and made avocado eggs using a round teaspoon measure.
DINNER: Vegan Loaf
This loaf made by Juliana seriously hit it out of the park!
Ingredients:
4 Beyond Beef burger patties
3 Beyond Sausage Brat Sausages
1 Cup Non-Dairy Bread Crumbs
1/2 a Diced White Onion
4 Cloves Fresh Garlic
Handful of Fresh Italian Parsley
1/2 a cup of BBQ Sauce
1 tablespoon Salt
1/2 tsp Black Pepper
1/2 tsp Chili Powder
Mixed all together and then topped with BBQ sauce. Bake in a meatloaf pan for 60 minutes at 350 degrees.
This was AMAZING!
SIDE: Abe’s Vegan Corn Bread Muffins
I picked these up from Natural Grocers here in Medford, and they were delicious!
DESSERT: Chocolate and Jelly Bean Egg Nests
This was SO simple! I melted 1 Cup of Dark Chocolate Chips slowly in a pan on the stone, then stirred in 2 Tablespoons of Justin’s Maple Cashew Butter until smooth. I added in 2+ Cups of Pretzel Sticks that I broke up into smaller pieces. Once the pieces were covered with the chocolate, I put them in a muffin tin and created a little opening in the center for my jelly bean eggs to go. I let them cool in the fridge, and then added the jelly beans (from Trader Joe’s) in the center. Delicious and perfect mix between the Maple Cashew Butter and Sea Salt on the Gluten-Free Pretzels!
This was the absolute most delicious meal and SO fulfilling. The vegan loaf was even more delicious the next day!
